I love smoothies, so much. Also, since my little guy has been around 9 months I have found them to be a brilliant way to get in lots of vitamins, fiber, and variety to his diet that I wouldn’t be able to otherwise… at least not easily and I’m all about easy where easy works!!!
Here’s what I put in today’s smoothie:
- 1/2 banana (it was quite large)
- A few handfuls of spinach (I roll it in my hands and rip it to break it down for smoother blending)
- Spiralized beets (I am addicted to adding beets to Salads, and discovered how easily it blends once it is spiralized)
- Shredded Carrot
- Shredded Zucchini
- Frozen Raspberries
- Hemp Hearts (~1Tbsp)
- A splash of almond milk
- Good old H2O (add until the liquid is about an inch below the top of the other ingredients)
Now throw all of the ingredients into the blending cup ( I use the one that came with my immersion blender ) and blend until smooth. Now sometimes when making a green smoothie, especially one with harder to blend veggies like beets and spinach you will need to stop and clear out little stuck bits on the end of your immersion blender wand. If you use a regular blender this won’t apply.
Once it reaches the desired texture and taste (you can always play around, adding more water if it’s too thick, more ‘stuff’ if it’s too runny) pour and enjoy! I had a sippy cup that I was ready to toss, because despite the promise to not leak I ended up with a soggy diaper bag and an empty water cup on a few occasions, but it is perfect for smoothies for my little guy because it has a wide straw. I’m clumsy and could probably benefit from drinking out of a sippy cup some days but I usually just throw it in a glass to enjoy ;)
Fun fact about this smoothie: beets and spinach contain iron which is so good for babies and toddlers (and Moms!), so not only is it pretty but you can feel even better about giving it to your kids!
